Filter Coffee in Orpington

Filter Coffee is the everyday coffee of South India, and at Crispy Dosa Orpington it is made the way it is made in Chennai. It is not pulled from an espresso machine and it is not a pour-over. It is percolated slowly through a two-part steel filter, and that method is the whole difference.

Dark-roast coffee, ground fine and blended with roasted chicory, is packed into the upper chamber and pressed down with a perforated disc. Hot water goes on top. Then it waits. Over ten to fifteen minutes the water works down through the grounds by gravity alone.

What collects in the lower cup is decoction: thick, almost black, and far more concentrated than brewed coffee. That decoction is the base of the drink rather than the drink itself.

It is combined with hot milk and sugar at roughly one part decoction to three or four parts milk. Then it is poured back and forth between the tumbler and the dabarah, the wide steel saucer it stands in, raising the stream a little higher with each pass.

The pouring is not for show. It mixes the coffee, cools it to a temperature you can actually drink, and aerates the milk into the light froth that gives South Indian coffee its smooth, almost creamy body. Pour too many times and it goes cold. That judgement is the skill.

Chicory is the signature rather than a shortcut. It deepens the colour, thickens the body and brings the faint caramel bitterness that makes this coffee taste like itself. A cup made without it tastes thin to anyone who grew up on it.

The result is strong and full-bodied, sweeter and softer than a black Americano and considerably deeper than a latte, where milk tends to take over. If instant coffee is your reference point, the first mouthful is usually a surprise.

Classically it belongs with breakfast, alongside a crisp masala dosa or a plate of idli with sambar and chutney. In practice most guests order it after a thali or a plate of medu vada, in place of dessert.
