Plain Uttapam in Orpington

Plain Uttapam is a thick and soft South Indian pancake made from naturally fermented rice-and-lentil batter. It uses the same foundation as dosa but follows a different griddle method. At Crispy Dosa Orpington, the result has a gently tangy, slightly spongy centre and a light golden crust rather than all-over crispness.

The batter begins with rice and urad dal, also called split black lentils. Fenugreek seeds contribute subtle character and support fermentation, while salt balances the taste. Resting the mixture develops the mild tang shared with dosa and helps create the airy texture inside the thicker pancake.

For uttapam, the batter is spread much more thickly across the griddle. It is cooked gently with oil rather than being drawn into a paper-thin crepe. The slower method gives the heat time to reach the centre without making the surface brittle from edge to edge.

Both sides are cooked briefly enough to set the pancake and create light colour. The underside becomes gently golden, while the centre stays soft and spongy. This texture is closer to a savoury pancake than a thin dosa and gives the dish its distinctive, comforting mouthfeel.

Thickness also makes Plain Uttapam feel more substantial than a dosa of similar width. The fermented batter provides a fuller bite, and the soft interior holds moisture instead of becoming dry. There is no topping or filling to add weight, so the texture of the pancake itself remains central.

Serving it plain allows the flavour of fermented rice and lentils to come through clearly. No onion, chilli, tomato or other vegetable is pressed into the surface. Diners can appreciate the batter's mild tang, lightly toasted exterior and gentle savouriness without another ingredient dominating.

Sambar and coconut chutney are served alongside for dipping. Warming sambar provides lentil, vegetable and spice flavours, while coconut chutney offers a milder and fresher contrast. The soft uttapam can absorb a little of either accompaniment while remaining intact enough to lift easily.

Plain Uttapam forms the foundation for the topped variations elsewhere on the menu. Onion, chilli and mixed vegetables can all be pressed into the same thick batter. Beginning with the plain version makes it easier to understand the texture and fermented flavour before exploring those additions.
