Cloudy is what apples actually produce. Three things stay suspended in fresh juice: pectin, which the fruit converts to a soluble form as it ripens; residual starch, which unripe apples carry in quantity; and fine fragments of cell wall and protein.

Clear apple juice does not become clear on its own. It is treated with pectinase, an enzyme that strips the pectin coating off the suspended proteins so they clump together and drop out of the liquid.

Amylase usually follows, breaking down the starch that would otherwise haze when the juice is heated. Then it is filtered. So the real choice is not cloudy against clear. It is untreated against enzyme-treated.

Apples also brown quickly. Polyphenol oxidase in the fruit reacts with oxygen the moment the flesh is broken, which is why a cut apple darkens on a plate and why fresh apple juice starts to change within minutes.

Pressed and poured, you get the glass before that begins. The colour will vary a little between batches depending on the apples we have that week, and that is a sign of fruit rather than a fault.

The flavour is crisp and clean, naturally sweet with a tart edge at the finish that stops it feeling heavy. It is fuller-bodied than clear juice, because body is precisely what filtration takes out.

It is the easiest juice on our list to drink alongside a full meal, since it does not fight with spice the way a strong citrus can. It is also the one children ask for most often.

Because it is pressed rather than poured, there is a short wait. It is worth it, and it is the reason we do not keep a jug of it standing behind the counter.
